This should be possible with Post Data field and additional category post. Please follow below example:

1. create Post category called “reviews”
2. add your reviews category to top menu (optional)
3. add your last 3 reviews on home page (optional suggestion https://stackoverflow.com/questions/56628893/how-to-get-latest-three-posts-from-the-same-category)
4. use Post Data field https://wpmudev.com/docs/wpmu-dev-plugins/forminator/#post-data-field and set up Default status as “Pending review” (https://wpmudev.com/docs/wpmu-dev-plugins/forminator/#default-status)

Please note end user will be able to see other categories in select of that form, but as Post Data will be set up as “Pending review”, the draft you will approve later on will still allow you to re-assign the category if members choose the other one.
