From address in emails sent

Where do you pick up the from email?
I sent a couple of test emails from Step 2 of the newsletter process they all went to spam because the address was “[email protected]” – this email address doesn’t even exist! How can I change the email address?
When I sent a test email from the Send With tab in the settings it correctly sent it from [email protected].
When I go to Step 3 I see that “[email protected]” is filled in. I changed it to [email protected] and selected “Save draft and close” but when I go to step 3 again it displays [email protected]
In the settings basic tab the addresses there are [email protected]
