“gallery displays image titles if no description” and the shortcodes in the titles are recursively expanded by https://github.com/airdrummer/dodo_shortcodes

Jetpack Carousel should show the Exif metadata mentioned here: https://jetpack.com/support/carousel/#carousel-options

If you’re using other image plugins on the site, they may be interfering with Jetpack. You can deactivate those other plugins and check the Jetpack Carousel Exif metadata again, to check if those plugins are interfering or not.

When using Jetpack Carousel with Exif metadata enabled, Jetpack will automatically display the following metadata for each image:

• aperture
• focal length
• camera
• shutter speed

It looks like that is working correctly on your site.

Jetpack does not have an option to change which Exif metadata is displayed.

You could certainly change that by adding custom code to your site. However, that is not something Jetpack support can help with, as it goes beyond our scope of support: https://jetpack.com/support/scope-of-support/
