Genesis Minimum Pro – Templates Options Missing

So I am trying to add a portfolio page to my site, and I like the simplicity of the one that comes with my theme (Genesis Minimum Pro Child Theme). My problem is, when I create the page that will be the portfolio and click the templates drop down menu, the Portfolio template is not there. I’ve already deleted the child theme and reloaded a fresh copy – no luck. When looking at the files that come in the theme’s zip, I definitely see “single-portfolio.php” but that doesn’t show up anywhere on WordPress, not even in the editor. Everything appears to be up-to-date. Any help would be appreciated!

Here is the demo for my theme, you can clearly see that there is a “Portfolio” template https://my.studiopress.com/themes/minimum/#demo-full. Oh, I should add that I am making the site locally using MAMP. I don’t think that would make a difference, but just in case.
