Gmail / MX Record / JustHost Debacle

Ugh. Help! Here’s my issue.
JustHost says that in order to use the WP-Mail Contact Form 7 SMTP, I need to use a valid email address on my domain that I’ve created in cPanel. Per the domain owner’s wishes, the MX record does not point the to JustHost server. So I’m assuming that any email I create in cPanel is both pointless and useless.
Instead I tried creating a gmail account and using that as the sending address and the SMTP server, and nothing I have done has been able to get that working.
I tried to send myself a password reset email from the wordpress admin login page, and that email didn’t even come though.
Any ideas as to what I should try next would be most appreciated.
