Also I’d like to cut some of the white space above and below the text blocks.

Edit that page, not in Elementor, and in page details https://rifetheme.com/help/docs/content-management/pages/pages-options/ change few options.
1. Disable title bar: Page details -> Title bar -> Title bar -> Turn it off
2. Make header appear above the content: Page details -> Header -> Hide content under the header -> Yes, hide the content.

Should be much better.

Thanks Air..diamond response. Regarding ‘cut some of the white space’ I would just like to tighten those blank areas top and bottom of text so that the page scrolls from one section to the other although that it is not as important as the title bar adjustment.

Also how do I get all the horizontal menu headings/items to show statically rather than just Home? Cheers.

I am not sure what you mean, but maybe you want the theme header to show up above the content.
For this please edit this page and go to Page details -> Header -> Hide content under the header -> Yes, hide the content.
