Header font different to body?

That’ll be in your stylesheet (style.css), but I’m not an expert in reading those (I do these things by trial and error ?? ).

So do you assign different fonts to different sections of the stylesheet? Or is it just a general selection for the whole site?

In most cases they are assigned. Just open the stylesheet and look over it. You’ll see different parts of the site usually with different colours, fonts, etc.
