Hide quantity seiector on cart page for certain products

I sell wood products and one of my categories is “Personalized Products”. On the “Personalized Products” single product page the customer fills in a name field, I then hand carve the provided name into the product. The single product page does have a quantity selector.

The name field is validated on submitting to the cart so there is not need for a quantity selector on the cart page for these certain products. I do need the cart page quantity selector for other products I sell but not for my “Personalized Products”.

Is there any to show the quantity that was selected from the single product page but disable the ability to add or subtract quantity on the cart page for my “Personalized Products” category?

Hopefully I’ve explained as to what I am trying to accomplish without being too confusing.
