Hide specific sites page columns by default

Hey, I have a question about hiding certain columns on the network admin sites-page. I want to add some columns to the sites table but have them hidden (unchecked) by default. I looked in the documentation and found the two hooks: default_hidden_columns and hidden_columns but adding my columns to the $hidden array and returning it doesn’t hide them. I’m not sure if I’m misunderstanding the point of those hooks or what. If so, is there another way to initialize columns but have them hidden by default?
