Hiding pages in index

On my secondary site, I am posting all of my writing. As such, I have added each piece (largely poetry) individually as a page, so the sidebar has a very long list of links. I’d like to just have a few links by which I could categorize these (Short Stories, Poetry, etc), and then further delineate those (by types of poems or grouping what the stories are about), but I went ahead and added them all through the WordPress console by creating new pages, thinking I could find a way to hide whichever later or that at least they would be entered and recorded somewhere. Now I am wondering if there is a plugin which will allow me to not have certain links displayed in the Pages category on the sidebar, since the ability isn’t built into WordPress. Has anyone else done this, or attempted to?
