Horizontal Flyout

I am working on this site here and I am using this plugin for inlined widgetized menus. I like this plugin very and the style and look and feel. What I would very much wish for is that when the user expands out the menu that the third tier items would fly out horizontally rather than vertically. My issue is that with the Vertical expansion, the user is forced for scroll down to get through the menu items and I see this as somewhat of a usability issue that would get resolved with a horizontal flyout.

If anyone has any suggestions.
