How can we limit the collection of passwords or payment information?

First of all, I want to thank you for your work.
I am interested to know what happens when we activate form collection for non-hubspot forms, and how does it process the data gathered because I can see many issues related to custom login/registration forms, not just the standard ones from WP, but there are many plugins that create forms for membership registration or even starting points for web application subscriptions and the fields are not always using a standard id like username / password… Is there any way to limit what the plugin is gathering and submitting to your servers ?
I have seen an older post stating the same question related to passwords, credit cards or payment information but no other mentions or “kill switches” in the past years…
Can you please provide a fresher explanation of how and where the data is being processed ?
