How do I change the email address that receives submissions?

I am running Ninja Forms plugin version 2.9.44. However, I want to change the email address that receives any submissions to forms on my site. I have tried to find where this email address is defined but have not had any success. Can anyone help?
PS I am not receiving any of the emails that I have sent as tests from the current form (it never asked me to define which email address I wanted to use!)
