How many pictures should I have in my gallery?

I understand that an image heavy page can slow down browsers, but my question is more about aesthetics. My site, rodhillen.com, is primarily an artist’s site. I know that some sites have a certain number of images on a page, and some have an endless scroll. Just using Etsy as an example, shops have pages, but searching newly posted items is a scroll.
My concern is to make it as easy and attractive to my visitors as possible. If they have to keep clicking to see more images, they may get bored and leave; on the other hand, if I have several gallery pages, I can organize my work by genre or style, and put the best stuff at the top of every page. This could make it easier to find something specific. As my website grows, it becomes apparent that I’m going to have to divide my pages. What are your thoughts or advice?
