You’d be best placed asking the plugin authors of the Mailchimp plugin you’re using for further directions.

If they have such an option, they will guide you on how to do it. If they do not have such an option built-in, you may have to use custom code to add the checkbox for the newsletter.

For instance, I see that the MC4WP: Mailchimp for WordPress plugin comes with a built-in option for adding the newsletter sign up checkbox on the WooCommerce checkout page: https://www.mc4wp.com/kb/subscribe-mailchimp-woocommerce-checkout/

So, it depends on the Mailchimp plugin that you’re using and the plugin authors will give you further insights about this.
