How to change e-mail adress with default to user e-mail adress

Hello Guys,

Default, WordPress messages come from [email protected] (or other defined by admin). Naturally, when we use the e-mail client (ex. Outlook), the reply to message is sent to user email. When I use CRM system the reply to message is sent to defined e-mail adress (wordpress@).

Does anyone know how I can change to display the user e-mail from the form instead wordpress@?

@t-p, thank you for involvement but that doesn’t solve my problem. I know that I can change the default name or email adress in WP but I would like to change default name and e-mail adress to name and e-mail adress with form. Method 2 is helpful, but I need a variable.
