How to change the category icon on a blog post?

We don’t have an option for this, but you can use custom CSS to change it, like this: https://i.postimg.cc/d1Y7yHVz/image.png.

Please put the CSS below in Customizing > Custom CSS/JS > CSS Code:

#wrap li.meta-cat .fa-folder-open:before {
    content: "\f07b" !important;
}

Change the Unicode by copying that from the list of icons at this link: https://fontawesome.com/v5/icons/folder?s=regular&f=classic.

Note: if you have any cache plugin or server cache(CDN / Browser Cache and Cookies and …), you need to clear its cache contents or disable them to see your changes. Also, remember to click on the regenerate all assets file and data in Elementor > Tools(if you have Elementor).

The link you’ve mentioned is in v6 that is not available on the theme yet, but if you want to use the classic icon on v5; since that’s a bold icon, you need to add font-weight on the icon, so please use this CSS to change it:

#wrap li.meta-cat .fa-folder-open:before {
    content: "\f303" !important;
    font-weight: 900;
}
