You should be able to target those labels individually using some CSS like this (if you want to change them to the same colors, you can combine the rules into one):

.woocommerce-checkout-payment .payment_method_stripe label[for=payment_method_stripe] {
  color: blue;
}

.woocommerce-checkout-payment .payment_method_paypal label[for=payment_method_paypal] {
  color: red;
}
