How to change user role when user fills in other optional profile fields?

I run a classifieds site and users are assigned the default role when signing up. Users can only post ads when they fill out optional form fields such as phone number, which are not required for default registration. Then they are assigned the role seller, and only sellers can post ads.
How do I automatically change the role from a user that has filled out the phone number and other custom fields from default to seller?
