How to choose preferred domain and 301 redirect?

My domain is fairly fresh about 3 months old. I started with non-www then I add www because I heard it is better for google SEO. I went to webmaster and tried to choose preferred domain but couldn’t understand that 301 redirect thing. I assume that my searches are spliited into www and non www of my domain. As you all more experienced than me. What is the real difference and which on should I stick with?
