How To Create Dropdown Menu Subcategories That Display Specific Blog Posts?

Hi all,
Please accept my sincere apologies if a question along similar lines has been posted before. I have followed various tutorials prior to coming here, to no avail.
My site is: departours.com
Theme: silverOrchid
Theme Author: Gazpo
WP Vers: 3.5.1
Site intention: travel siteIf you take a gander at my site, you can see I have created menu items already. Destinations has drop-down subcategories, plus further subcategories for regions of countries.
My problem is that I want to feature my travel articles as blog posts on these subcategory pages. So, if I wrote 10 about Cumbria, I’d feature them all on that page as new posts, and perhaps 1 or 2 select ones on the England page too.
I’ve tried creating categories with Destinations as a parent for England and so forth, however, in doing so, I lose the dropdown capability for subcategories. I can’t have a custom menu in the header as my theme doesn’t allow it, and I’ve also tried using a Dropdown Menu Widget which obviously won’t work for that reason.
My knowledge of code isn’t very advanced. I can get by with CSS and know certain bits to look for/ alter in php files. I was wondering if anyone would be kind enough to give me a prod in the right direction on how to achieve the above.
