How to create multiple shipping method options?

You can do that. In your dashboard go to WooCommerce > Settings and select the Shipping tab at the top. Here you can set up your shipping zones, which are the geographic areas where you offer the same shipping options. Once you have one set up, click on its name to edit it.

Here you can add the shipping methods you want to offer in this area. To set up your example you would need to add two flat rate shipping methods. You can name one of them 1-day delivery and set the fee. Then in the other one call it 3-day delivery and set the fee for it.

Then when a user has a shipping address that’s in that zone checks out, they’ll have those options available at checkout.
