How to disable microdata?

Try adding the code add_filter( 'edd_add_schema_microdata', '__return_false' ); to your themes functions.php file or inside a custom plugin. That should deactivate the schema from being added to the site.

That does not remove the itemprop for the post title.
Looking at the code, the title filter only checks if the wp_head action has been done.

I just tested it on my end and its working correctly. Try clearing your cache after adding it.
You can see it in this file https://github.com/easydigitaldownloads/easy-digital-downloads/blob/master/templates/shortcode-content-title.php#L1 that if the edd_add_schema_microdata() function returns false (which it will based on code snippet) then the itemprop will not be added.
