How to handle deleted pages

I have just installed this plugin and it works great for my site as I am doing big changes to the hierarchy of pages. I will need to delete some pages but I am unsure how to handle this as far as 301s are concerned. I think I need to keep the page (rather than delete it) and instead add in a redirect to a suitable page. I would have thought that there would be an option within the page admin area but I cannot find one. Am I right in thinking then that it all has to be done through the redirection plugin area?

I am using WP 3.9.1 and the latest version of the redirection plugin.
