How to make a plugin override

So I was searching all over the Google looking for ways I can override xxx plugin, Google didn’t tell me anything about this. Only thing Google told me is that don’t customize the core files of the plugin because during update the plugin core files will be updated too and I will loose all the customization.

Let say I want to customize the plugin depending on my website requirement. How will I achieve this.
