How to make everyday product statistics?

    I need to backup everyday product data, in the form like this:

    date
product id
category id
price

    This backup should be written into the database, to enable me to plot everyday category-wide price charts, like minimal, average and maximal price in a certain category.

    What would you recommend to achieve this goal? Any plugin or workflow?
