how too modify languages files and export

Hi there,
great plugin, but some issue:
I would like to modify some phrases that in Italian sounds not so good: tried to modify the rsvp-plugin-it_IT.po file founded in the plug-in directory but nothing changes.

Trying to export data I get and error like this one:
Fatal error: Call to undefined function mb_convert_encoding() in D:\Inetpub\webs\mysite\mydir\wp-content\plugins\rsvp\wp-rsvp.php on line 699
