How to remove Snippet Variables for content types?

I use my own custom SEO Titles and Meta Descriptions and do not want to use the same exact titles and excerpts from my post. If I remove the snippet variables (bubbles) in the settings, it appears to just default to the typical <title><separator><category> etc. instead of showing a blank entry field.

Is it possible to disable this completely? I want to be able to write my own and not have to remove these annoying snippets each time.
