how to turn auto-updates off

I had a plugin that didn’t do it’s job, thus deleted.

I have 8 sites I run (my sites, other people’s site not included in this post).

I got the e-mails that they were updated, one of them at 2:11am. I am sleeping at that time. What if there was an issue with the theme or/and plugins? I can switch plugins, and sort of switch themes.

I like doing updates manually, because sometimes things don’t work out well and there are conflicts between WorPress core and themes/plugins, or when I update a plugin, then plugin-plugin conflict and so forth.

How do I turn off ALL updates. I want to do them manually (just like I do for themes and plugins).
