How would I log changes to categories?

I’ve been experiencing a number of seemingly random category changes for a number of posts, and I wanted to know how I would log any change to the category of any page or post.
I’m not a programmer, but it seems that out of necessity, I’ve become quite familiar with numerous PHP files, style sheets, etc. So, if you provide instructions, I should be able to make the changes you suggest.
Also, will this plug-in trap on and capture edits that are done using the Mass-Edit capabilities in WP?
