Since your not posting anything the answer is no, no documentation regarding self-hosted videos.

Can you post a couple of screenshots maybe?

The short answer is yes. You can add self-hosted videos with FooVideo. Rather than using the YouTube, Vimeo or other options, you would go to the “Other Video” tab and then paste in the URL to your video (that resides on your server or in your media library)
