OK, I found this fix and it actually WORKS (for once)
If you’re having issues uploading images and getting the
HTTP error – while crunching.. do this.

    via FTP
    Create an empty plugins folder

    • Navigate to the wp-contents folder (directory)
    • Rename the folder “plugins” to “plugins.hold”
    • Create new folder called “plugins”
    • Login to your WordPress administration menus
    • Go to your Plugin Menu.. all your plugins will “break”
    • Reload the page, all your plugins are gone
    • Via FTP Delete the empty “plugins” you previous created
    • Now.. rename “plugins.hold” back to “plugins”
    • Reload your plugins admin page.. all plugins are back
    • NOW, try uploading an image.. no more HTTP error!
    • Now, re-activate your plugins. (bulk) all your settings for each plug in should still be there.
