Once the Classic Editor plugin is installed, you can then also configure WordPress to allow you to switch between the two editors… the best of both worlds in my opinion!
And you can further configure things to default to which editor you prefer with the ability then to switch to the other.
On the CloudFlare side, you can turn CloudFlare’s proxy service on and off via their plugin (I think that is an option) or from their dashboard leaving the DNS services running there.
The last time I needed that I thought there was a way to temporarily suspend the proxy service for 24 hours or so as needed. Great for troubleshooting and it reverts back automatically.
