You can use filterwc_stripe_payment_intent_args to customize the description property.

Example:

add_filter('wc_stripe_payment_intent_args', function($args, $order){
	$args['description'] = sprintf('%1$s,%2$s %3$s', $order->get_id(), $order->get_billing_first_name(), $order->get_billing_last_name());
	return $args;
}, 10, 2);

That would produce a description that looks like 1005, John Smith. You can change this example to suit your needs.
