    Without the option enabled, remove product-category – everything opens fine

    That plugin is not supporting Rank Math for a long time:

    You would need to contact the plugin developer to get this resolved.

    If you do not enable remove product-category in your plugin, then categories in different languages open normally.
    The setting is in your plugin, not in Polylang

    In the slug translation options for the languages you need to make sure that the category base is also removed from there, in the Polylang settings.
