    Our site uses Innodb for all 231 tables. Our host is using MySQL 5.7. Is it still not recommended to optimize the database? Will this change with MySQL 8.0?

    You should (Just) be Ok with 5.7. with WPO The end of life for this version is 31st October so I would still strongly recommend you upgrade.

    Thanks for the quick response. I want to make sure I am understanding you correctly. I should be okay to do a database optimize on an Innodb running under MySql 5.7, Correct?

    Our host is updating to MySql 8.0 on our server on October 11!

    Yes you should be OK with 5.7. As we always say, please take a backup first as there is always a risk with with DB optimisations.
