Invoice ONLY (for manual processing)?

I’m curious to know if this only works with an existing payment gateway, or if I can set it up with NO payment gateway and instead, use this to send the order to me so I can manually process the order.
In other words, will this plugin work even if there are no payment gateways such as PayPal, VISA, check, etc.? Or does it require some form of payment to complete the process?
