Have you seen the extension PDF Invoices that’s in our WooCommerce.com marketplace? You can create fully customisable invoices using this extension, and if the field you want to change isn’t in the settings already, you can also target and translate specific strings in the template using LocoTranslate.

I’ve had a look around and customizing the order invoices comes in as a premium plugin or custom coding form. There are some plugins out there that you can try here and here.
