Is there a way to force regeneration of XML sitemaps?

I’ve been making quite substantial changes to the tags on my site, removing lots of ones which were only minimally used. However, many of the removed tags are still appearing in the XML sitemaps, even weeks after being removed.
Is there a way to force a complete regeneration of the sitemaps? (Or another fix?)
I’ve tried things such as changing some of the sitemap settings to see if that would force a refresh, but without success.
