Issue with event times after Daylight Saving starts

I have multiple recurring events, and some (not all) show incorrect times for events after daylight saving starts in Australia on 5 October.
For example, an event that should be on at 730am – 830am displays as starting at 830am. If I change the time for the event to allow for the 1 hour difference, it makes no difference.
Example #1 I added a new event for “Daylight Saving Starts”, had a start time of 2am which is when our clocks change, but it displays on the site as starting at 3am. If I try and change the event to start at 1am, it keeps reverting to 3am.
Example #2: Sunday evening mass starts at 430pm; but is now showing as starting at 530pm post daylight saving. In the dashboard, the event actually shows as starting at 630 AM which is totally the wrong end of the day!
I have the correct WP settings, i.e. in the Sydney timezone. Should I be doing events in sets for daylight saving time and non daylight saving time? One of the reasons I chose this plugin (on multiple sites) was that I thought it would handle changes without a great deal of angst.
Any assistance you can provide would be most appreciated!
