Most of the text comes from Google directly not from the plugin. Prior to v0.82 but I am not sure going back how far, there was a bug where the plugin always used the Google Default Text override values despite whether or not they were enabled.

Because Google tries to be really clever and deliver their content in a local language, frequently I get questions about why the buttons or other text is in Chinese or another language. This is usually due to the web server (which is what is retrieving the HTML code from Google) being geographically in a location where Google thinks it should serve some other language.

To rectify this problem, you need to add the language parameter to the URL in your Google Form definition within WordPress. Here are some posts on my site about this problem:

    1. New Google Form supports language parameters
    2. Why are my buttons in Chinese
    3. Example form in French

Hopefully this will get you going in the right direction.
