hello, I read on your plugin page:

Please note that the Legacy REST API is not compatible with High-Performance Order Storage. Upgrading the code that relies on the Legacy REST API to use the current WooCommerce REST API instead is highly recommended.

But woocommerce doesn’t need rest api to work, so can we just disable rest api and delete this plugin ?

    Thank you.

If you don’t need or use the Legacy REST API, then yes: you can absolutely disable it and remove this plugin.

Also, so long as your copy of WooCommerce is up-to-date, then if the Legacy REST API is in actual use you should generally see a warning in the admin environment, looking something like this:

The WooCommerce Legacy REST API has been accessed 5 time(s) since 11 January 2024. There are 1 known user agent(s) registered. There are more details in the WooCommerce log files (file names start with legacy_rest_api_usages)

If you don’t see this, and nothing has been recorded in the logs about the legacy REST API, then that is also a great indicator that you can safely remove it.
