First, the way BD currently works is that you can set a field as the “excerpt” and this will be used for the list view to restrict how much text is displayed. You can read about configuring and managing fields here: https://businessdirectoryplugin.com/knowledge-base/manage-form-fields/
Restricting the actual content happens in the Featured Levels module, which is optional for purchase. https://businessdirectoryplugin.com/knowledge-base/featured-levels-module/
Sticky listings (we call them “Featured Listings”) can be enabled by creating the right kind of fee plan (which can be free if you want, although that tends to defeat the point of having only some listings sticky).
