location of categories

Assuming you’re referring to the post Categories, those descriptions are kept in the table wp_categories.

Yeah, they aren’t stored in a PHP file anywhere – they’re in the DB, where MichaelH said.

If you want to include an image instead of the category name, I’d recommend using naming the images with names that reflect the category ID number. See here in the codex.
