You can change the <title> tag from settings > “Design” > “Content” > “Title (HTML tag)”.

If you want to remove it entirely, there are two ways to do it:
– edit the plugin: /wp-maintenance-mode/views/maintenance.php
– override the default template: https://www.ads-software.com/support/topic/feature-request-allow-overriding-templates/

Also, don’t forget to purge the cache after you make the change because you have Endurance Page Cache activated.
