Making all products virtual/downloadable as default?

It was probably this filter:

add_action( 'default_product_type', 'custom_default_product_type' );
function custom_default_product_type() {
  return 'variable';
}

You should make a child theme:
https://codex.www.ads-software.com/Child_Themes
and put the code in functions.php in the root of the child theme. That way will be update-safe. If this is the first snippet in functions.php, then the first line of the file must be <?php to turn on php.
