manage stock in dropshipping

If I disable it, and the product stock becomes 0 in the supplier’s inventory, will then become “out of stock” in my shop?

When the Enable stock management feature is on, inventory for physical products is auto-managed. You enter a quantity, and WooCommerce subtracts items as sales are made.

If you disable it, inventory is handled manually.

If you want to update your inventory according to your supplier’s inventory, you can do it using a dropshipping extension like WooCommerce Dropshipping.
