managing capabilities – woocommerce

Hi, I am working with the woocommerce capabilities for a client and I’m having trouble understanding how to manage roles and capabilities. I would like to create a username for my client as a shop manager to edit shipping and payment information, etc. but I don’t want them to have access to any of the pages I’ve created or the plug-in’s that I’ve configured, etc. How do I do this? When I create a new user wtih Woocommerce, all of the capabilities are already set and I can’t edit them with the User Role Editor plug-in that I have also installed. For instance, the shop manager is able to delete pages and edit files, etc. Am I able to create a new user and manage their capabilities from the ground up? Thanks!
