How can I change the timestamp on the imported post to reflect the difference?

You’d have to use a PHP function for that: https://www.wpallimport.com/documentation/developers/custom-code/inline-php/. Here’s an example snippet:

function my_convert_timezone( $date ) {
	$date = new DateTime( '@' . strtotime( $date ) );
	$date->setTimezone( new DateTimeZone( 'America/Chicago' ) );
	return $date->format( 'Y-m-d H:i:s' );
}
