Manually create aggregate rating schema

WPSSO is designed to use existing data from the database, and offers customization options for most of the data it retrieves (in the Document SSO metabox, for example). Having to manually maintain values is not something we aspire to, or that most plugins would aspire to. If you need to manually code and maintain your Schema markup properties, you should consider creating a child theme and modifying your theme templates directly.

Optionally, if you use the WPSSO JSON Premium add-on, you could hook a filter and provide the aggregate rating values from custom fields, etc. See here for an example: https://wpsso.com/docs/plugins/wpsso-schema-json-ld/notes/developer/filters/examples/modify-the-aggregaterating-property/
